Instructions

  • In a pot, add oil (10ml), Emirati ghee (5gm), chopped onion (30gm), chopped garlic (10gm), chopped coriander (5gm), 1 dry lime (poke before adding) and tomato paste (15gm); stir all the ingredients together
  • Add chopped lamb cubes (200gm), carrot cubes (15gm), marrow cubes (15gm), potato cubes (15gm); mix all the ingredients, then add turmeric powder (2gm), cardamom powder (1gm), black pepper powder (1gm), Emirati ibzar spice (3gm) and salt (6gm); mix to release the stock from the ingredients
  • Add chopped tomato (40gm) and tomato pronto (80gm) and mix again
  • Add water (160ml), stir gently and add corn starch diluted in water (10gm); mix the ingredients and let it cook for an hour and a half on medium high heat
  • Best enjoyed with white basmati rice
