  • Add chopped parsley (6gm) to ground lamb (280gm), add chopped onions (40gm), Arabic all spice (1gm), cardamom powder (1gm), white pepper powder (1gm) and salt (4gm); mash the ingredients until evenly mixed and let it sit overnight. After, grill each side for 20 seconds, then roast at 180 °C for 8 minutes.

  • Add corn oil (15ml) to a pre-heated pot, add chopped onions (30gm), chopped garlic (10gm), cinnamon powder (1gm), chicken stock powder (5gm), white pepper powder (1gm), salt (5gm), Arabic all spice (1gm) and tomato paste (15gm), stir all the ingredients together and cook for 5 minutes on medium heat
  • After 5 minutes, add tomato pronto (80gm), mix and let it cook for 15 minutes

  • Soak the basmati rice for 30 minutes, then add cooking oil (15ml) to the pot, add vermicelli (40gm) and shallow fry until golden in colour; add 1 or 2 cloves of cardamom, add basmati rice and mix the ingredients; add water
  • Cover with foil and cook for 10 minutes on very high heat, followed by 10 minutes on very low heat
