Instructions

  • Add machbous spice (4gm) to the chicken cuts (chicken cubes 250 gm, chicken breast 288gm), sprinkle with cardamom powder (1gm)
  • Add lime juice (5ml), Emirati ghee (6gm) and lastly salt (6gm)
  • Mix all the ingredients and let it marinate for 2 hours
  • Roast the chicken at 180 °C for 12 minutes

  • Add cooking oil to the pot (10ml)
  • Add Emirati ghee (5gm), chopped onions (20gm), chopped garlic (5gm), chopped coriander (5gm), tomato paste (15gm), turmeric (4gm), machbous spice (6gm); sauté five to seven minutes for the tomato paste to release its oils
  • Poke and add dry lime (1ea)
  • Turn heat to medium, add chopped tomato (150gm), tomato pronto (100gm), mix
  • Add chicken stock powder (5gm), water (200ml), sprinkle salt (5gm), cover with foil and let it cook for 15 minutes on high heat

  • Soak the rice (200gm) and set aside
  • In a pot, add cooking oil (10ml), Emirati ghee (5gm) and chopped onions (20gm); stir, add chopped coriander (5gm), tomato paste (15gm); sauté for five to seven minutes until the tomato paste releases its oils
  • Add chopped tomato (100gm), machbous spice (4gm), turmeric (3gm), chicken stock powder (6gm), dry lime (1ea) and let it cook for 5 minutes
  • After 5 minutes, add the soaked rice, mix all the ingredients, add 2cm of water (350ml) above the rice, stir and add salt (6gm); cover with foil and cook on high heat for 10 minutes, lower the heat and cook for another 10 minutes
