You would have to search high and low to find a more extensive menu than that of Spectrum on One. The eight different kitchens from around the world offer regional specialties from Europe, the Middle East, South East Asia, Japan and the Indian subcontinent.
The chefs at Spectrum on One run everything like clockwork, liaising via headsets to ensure each table’s order is ready at the same time. Rather than allowing yourself to be seated immediately, you might like to wander around the sizeable floor space of this venue to pick your own spot. A lively place, especially after 21:00, Spectrum on One is perfect if you’re dining in a large group and can not decide on where to go.
The real beauty of Spectrum on One is its much-fêted Friday Moët brunch, which started a fad in Dubai for champagne brunches. Running from noon until 15:00, quite apart from limitless champagne, there is a fabulous selection of different foodstuffs on offer, with a particularly noteworthy seafood section, and exquisite chocolate truffles.
Book well in advance to secure a table for brunch or on the weekends, but last minute bookings should suffice during the week at Spectrum on One.
